Can we talk about putting your notice in before the offer is signed?

I watched a buddy quit his job last Tuesday after a handshake promise, then the new company froze the role on Thursday. He got stuck with no job and a burned bridge, so I keep telling people to wait for the signed paper... has anyone else seen this backfire in real time?
