Watched a master butcher from Italy break down a whole hog at a demo last spring

He never touched his knife twice on the same spot before wiping it clean, and now I keep a rag pinned to my apron at all times just like he did because it keeps my cuts way more consistent, has anyone else picked up a habit from watching someone work live?

Oh, that's a good one... I picked up something similar watching a guy shuck oysters at a seafood spot in Maine. He never twisted his knife, just this one smooth slide and pop, and now I do the same with my paring knife for trimming fat. Funny how one little thing you see live just sticks with you forever...
