The day I watched a senior butcher debone a pork shoulder in 90 seconds flat

I had been fighting with the blade angle for like 6 months and then this old timer showed me I was basically hacking at it instead of following the natural seam, anyone else had a moment where you saw a trick that made you feel like an amateur?

oh man i feel this hard. i spent a whole year doing my pork shoulders like a caveman with a hammer, just smashing through bones and making a huge mess. then i watched a lady at a competition take one down in like a minute and a half, following the seams like she was reading a map, and i felt like a total fraud. i still butcher like a blindfolded toddler but at least now i know where i'm messing up.

the first time i tried breaking down a whole chicken i ended up with something that looked like it got hit by a truck. feathers everywhere, joints all wrong. my buddy who's a chef just watched me and said "you know you can just buy it pre-cut right?
