That cheap boning knife I bought on a whim actually holds an edge well

I grabbed a 10 dollar Dexter boning knife off the truck last month expecting to toss it after a week, but I've been using it for breaking down chickens and it's still sharp after 30 birds. What convinced me was how it handled the rib bones without chipping. Anyone else found a budget knife that surprised you?

Different experience here. Picked up a Dexter last year and the edge rolled on me halfway through breaking down a single case of thighs. Maybe you got lucky with the heat treat or something, but mine couldn't handle scraping against the back of the ribcage without showing damage. I stick with Victorinox now for cheap boning knives cause that flex point steel holds up way better for what I need.

Wonder if you got a counterfeit Dexter... they've been popping up more lately.
