Swore by my old boning knife for 8 years. Tried a new one. Huge mistake.

Had this worn-down Victorinox that I'd sharpened into a toothpick. Felt like an extension of my hand. Bought a fancy new German steel blade last month. First cut on a pork shoulder and I nearly took off my thumb. The balance was totally off. Has anyone else regretted a tool upgrade that bad?

Screw your worn-out Victorinox, dude. That toothpick knife was dangerous and probably flexing like crazy on thick cuts. A proper German blade has heft and that's the whole point, you're supposed to let the weight do the work not muscle through like some amateur. You trying to debone a pork shoulder with it on the first go is like taking a Ferrari on a gravel road before you even learn how to shift. Give it a few weeks of breaking in, learn to use the spine for leverage, and you'll wonder how you ever put up with that flimsy old thing.
