Swapped my boning knife for a curved one last month
I've been using a straight blade for trimming briskets for 5 years and never thought twice about it. Picked up a 6-inch curved Victorinox on a whim and the first brisket I did with it took 20 minutes less than usual. Has anyone else noticed a big speed difference switching knife shapes for specific cuts?

Honestly yeah, I switched up my knife for trimming and felt like a pro after the first try.

Hold on, are we sure a new knife is actually making you better or is it just a placebo thing, though? I mean, I tried a fancier blade and ended up cutting way too deep the first few times and ruining half my batch. Maybe it's just me but sometimes it feels like an old, familiar tool you've worn in is actually more reliable than some new shiny thing.
