Spent 3 hours breaking down a hog and it hit me that I've been sharpening wrong for 8 years
Had a 240 lb hog come in Tuesday morning and I was fighting the whole primal, just muscling through the seams instead of letting the knife do the work. Around the second shoulder I finally stopped and looked at my steel and realized I'd been honing at like a 25 degree angle this whole time, not the 15 I thought I was. Grabbed the 1000 grit stone, reset the bevel right there on the bench, and the rest of that hog came apart like butter. Went home and checked my boning knife and my breaking knife and they were both way off too. Anybody got a cheap angle guide they actually trust or do you just eyeball it after enough reps?
Just get the $15 guide off Amazon and check once a month. Eight years of eyeballing is how you end up at 25 degrees without knowing it. Fix the bevel once, then use the guide to keep it honest.
