Remember when breaking down a side of beef meant using just a hand saw and a knife?

I started apprenticing in my uncle's shop back in '89 down in Knoxville. He swore by his old Forschner breaking knife and a simple meat saw, wouldn't touch those newfangled electric tools. Took me until last year, when my wrist started giving out from all that twisting, to finally buy a decent band saw for breaking primals. It's not cheating, it's just working smarter. Any of you old timers finally cave and switch over to power tools?

That wrist pain is no joke, I've got a couple buddies who had to switch over for the same reason. Your uncle sounds like he knew his stuff, but there's no shame in keeping your body working another decade or two. Smart move grabbing that bandsaw.

Ain't that the truth, my hands sure don't work like they used to either.
