My mentor told me to always sharpen before every shift, not after

Old timer named Dave at my first shop in Portland swore up and down that honing the steel before you start keeps it cutting cleaner through the whole day. Tried it for a month and my trims came out way smoother, less waste on the primals too. Anybody else get advice that actually stuck with you?

Old timer named Dave" sounds like he just wanted an excuse to stand around sharpening knives all day.

Nah @tessa_roberts1, old Dave probably knew his stuff lol. Good knife skills take patience and nobody's standing around for hours just to look busy with a whetstone.
