Forget the speed, @the_dylan. The real skill is knowing the exact spots to cut so you don't ruin the good meat for sausage or bacon. It's about using the whole animal right, not just doing it fast. A messy fast job wastes food. That fair guy probably learned from someone who did it for fifty years. That kind of knowledge beats a clock any day.
