Hit 500 pounds of finished sausage this month in my home shop in Topeka
I've been doing this as a side business for about two years now, and I just totaled up my October numbers. 512 pounds of sausage made and sold, which is more than double what I did last October. Never thought I'd get to that point from my little garage setup. Anyone else keep track of their monthly output and get surprised by the growth?

Hey, did you notice the same thing with certain recipes just taking off? Man, I had that exact moment a few months back when I realized my jalapeno cheddar was outselling everything else three to one. I was making like eight different kinds every batch and it was killing my time. Soon as I cut back to just my top four flavors, my weekend output went from 40 pounds to over 70. It feels good to see the numbers climb like that once you stop overcomplicating it.

Tracked my output from the start and it really does sneak up on you. I hit a similar jump when I started doing farmers markets regularly and actually talking to people about the different sausages. The biggest thing that helped me was keeping a simple log on a whiteboard in my garage, just pounds per batch and what sold fastest. That way I could ditch the slow movers and focus on the three or four recipes that really moved. Once I stopped trying to make ten different kinds every month the whole process got faster and the numbers climbed without me even trying. Your 512 pounds is solid work for a garage setup.
