Warning: My $4 rotisserie chicken plan went sideways at the Piggly Wiggly in Tuscaloosa
I was going to stretch one chicken into 5 meals, but the deli guy said they only had 2 left and I panicked and bought both. Now I have 10 meals worth of chicken and my freezer smells like a rotisserie. Has anyone else overbought just because the deal was too good?
Two chickens can go a long way if you get smart about it. Pull the meat off both birds while they are still warm, then sort it into bags by what you plan to do with it. One bag for straight eating, one for soup, one for chicken salad or tacos or whatever you like. The bones and skin go in a pot with water and whatever veggies are getting soft, and that turns into stock for rice or beans later. That way the freezer smell does not take over everything and you are not stuck eating the same plain chicken five nights in a row.
