Serious question, why does everyone say you need fresh herbs for good flavor? My dried basil from a $2 jar in 2021 works fine.

Try making a simple tomato sauce with both. Use your dried basil from the jar, then next week make it with fresh leaves torn right off the stem. The dried stuff gives a dusty, muted background note, while fresh basil punches through with a bright, almost peppery flavor that totally changes the dish. It's the difference between hearing a song on an old radio versus live in the room. For stews that cook all day, dried is fine, but for finishing a pasta or a salad, fresh is non-negotiable.
