My big pot of chili almost turned into a disaster last night
I was making a double batch of my cheap chili recipe for the week when I realized I only had half a can of kidney beans left. I was already at my stove in my kitchen, so I just grabbed a can of black beans and a can of corn from the pantry and threw them in. It actually turned out better, and the whole pot cost less than $8. Has anyone else had a missing ingredient turn into a happy accident?

Honestly, I just read that someone on here was saying how throwing in some leftover salsa verde saved their chili when they ran out of diced tomatoes, and now I'm thinking I need to try that myself. It's wild how often I'm missing one random thing and end up with a better meal than if I had followed the recipe. Ngl, the whole "citrus mix" idea from earlier in this thread has me curious too, like I bet a splash of lime juice could wake up a pot of chili that's feeling a bit flat. Tbh, I think half the fun of cooking is just making it work with what you have, and sometimes that's how you stumble onto your new go-to combo.

My mom's lentil soup recipe calls for a full lemon, but I only had half of one left. I squeezed in some orange juice from the fridge to make up the liquid, and the citrus mix gave it this really bright, sweet flavor. I've made it that way on purpose ever since.

That "citrus mix" idea from @olivere30 is genius, I did the same with lime in my chili once and it totally changed the game.
