My $5 lentil soup turned into a disaster when I forgot to soak them overnight.
Had to simmer it for almost three hours in my tiny apartment kitchen, but it actually made the broth way richer and now I'm never soaking lentils again, anyone else skip the soak?

Wait, do red lentils really need a soak? I thought they were split and cook so fast they just dissolve anyway. The long simmer is for brown or green lentils to get tender without soaking.

Been there! My whole place smelled like lentil steam for an afternoon once. It felt like a mistake at the time, but you're right about the broth. That long cook time really pulls all the flavor out of the veggies and herbs. I skip the soak for red lentils now too, they just fall apart into the soup anyway. Happy accidents in the kitchen are the best kind.

Oh man, @river_hart18, that lentil steam smell... my kitchen walls got a little damp last time I made a big pot. Totally worth it for that broth though.
