Roasting the bones is the real secret. Makes all the difference.

And it's not just the flavor either, it's the color you get. That deep brown almost mahogany color you can't fake with anything else. I messed up my first few batches by skipping that step, figured it couldn't matter that much. But once you taste the difference there's no going back, it's like night and day.

Oh man, your aunt is totally right. I read this whole article about how roasting bones gets all that good flavor out before you even add water. It's like the base of the whole thing. Sean_murray gets it, that step changes everything. My soup went from kinda bland to something that actually tastes like food. It takes more time but it's not even hard to do. Just throw the bones in the oven first, it's a complete game changer.
