Got roasted by a pitmaster in Memphis over my $2 bean pot and honestly he was right
I was at a church cookoff in Memphis last month trying to feed 40 people on 30 bucks and my smoked pinto beans came in dead last. An old pitmaster named Ray pulled me aside and said "son you are boiling flavor out before you even start," then showed me to soak the beans overnight and use the ham hock water instead of dumping it, which dropped my pot cost to about $2.40 a batch. What cheap tricks did yall pick up from somebody older that actually stuck?
