PVA vs wheat paste on bookcloth, night and day after 48 hours

Swapped my adhesive mid-project on a run of 12 journals in my basement workshop near Portland. PVA dried stiff and flat, but wheat paste let the cloth relax into the corners without fighting me. After 48 hours, the wheat paste covers stayed smooth while the PVA ones had that plastic feel and slight ripple around the hinges. I used a 3:1 water to paste ratio cooked for 10 minutes. Anyone else notice a big difference in how bookcloth behaves with different pastes?
