Overheard a seasoned binder say he never trims his signatures before sewing

Heard an old timer at the Guild meeting say he never trims his signatures before sewing, and it got me thinking about whether I'm overcomplicating my workflow. Has anyone else tried skipping that step and noticed a difference in how the spine lays?

Wait no way. I've been trimming signatures for years and the thought of not doing it makes me twitch. The whole point is to get that clean square edge so the spine folds even. If you skip trimming, how do you keep the sections from shifting around when you sew? I tried it once on a practice book and the spine was all lumpy and uneven. I had to trim after sewing anyway to fix the mess. I don't see how any experienced binder would recommend this unless they're working with perfectly cut paper from the mill.
