First time I trusted my preheat check and it paid off
Been at this boiler repair gig for about 8 months. Today I let that gun sit for an extra 5 minutes before I pulled the front plate, and the temp drop was almost nothing. You guys have any routines for trusting the metal instead of the thermometer?

How much longer did you let it sit before pulling the plate?

Gave it a solid 10 more minutes after I noticed the first little cracks forming, Jen. That's usually my sweet spot - any longer and the whole thing starts to dry out and get rubbery. 5 minutes is too short, 15 is pushing it. You want that nice golden crust but still a bit of give in the center. Depends on how thick your pan is too, a thin one will seize up way faster than a cast iron.
