Gotta ask, is a super expensive grinder really that big of a deal? I used a cheap 1x30 from the hardware store for years and my knives came out fine. People get so hung up on gear. A steady hand and practice seem way more important than the brand name on the motor. Sure, a fancy one is faster, but calling it a "game changer" feels like a stretch.
