Changed my mind about pre-wetting coffee filters after the workshop last weekend
I went to a cupping class at a shop in Portland and the guy running it said skipping the rinse lets the paper flavor stick around in the cup. I tried it both ways with my Chemex and the unrinsed batch had a weird cardboard taste that was obvious side by side. Has anyone else noticed a real difference or is it just placebo with certain papers?

Yeah I totally get what you mean. That "tossed the rinse and instantly tasted the difference" line is exactly how I felt when I tried it too. I did a blind test with my V60 a few weeks ago and the unrinsed cup had this flat, almost dusty taste that hit me right away. It was subtle at first but once I went back to the rinsed one it was so much cleaner and brighter. I'm pretty much a rinse believer now, especially with thicker filters that hold onto that papery feel.
