Vent: Stand mixers feel like cheating to me
I mean, a lot of people say they're essential for perfect dough, but maybe it's just me, I get way better results just using my hands. Idk, am I crazy or does the extra feel actually matter?

Read an article once where a baker said machines can overheat delicate doughs... like for some pastries or bagels. They said the friction changes the texture. But for a big batch of tough bread dough, my hands just give out halfway through. So maybe it depends on what you're making. Sometimes that extra feel tells you exactly when to stop, before it turns into a gluey mess. The cleanup time is way less with hands too, honestly.

My friend tried to make croissants with a mixer last year. He said the dough got warm and sticky from the machine's friction. When he switched to hand-kneading, he could feel the point before it turned gluey. But his arms were shot after just a few minutes, so he gave up. Now he only uses the mixer for bread dough, and even then he watches it like a hawk. Cleaning up after the machine was a nightmare compared to just washing his hands.
