Used to dump all my sugar cookies into one bowl like a madwoman
I used to just toss everything into one bowl for sugar cookies and call it a day. Butter, sugar, flour, eggs, all of it thrown together in a single mixing bowl without any thought. About six months ago my oven broke and I had to bake at my sister's place for a holiday party. She watched me dump it all in and just stared at me like I had three heads. She made me separate the wet ingredients and dry ingredients, mix them separately, then combine. I thought she was being extra for no reason. But the cookies came out way softer and didn't spread into flat pancakes on the sheet. Now I'm a total convert and do it every single time. Has anyone else had a basic technique change that made a huge difference for you?

You said "toss everything into one bowl" and I get why that seems easier, but you're actually missing a key step for most cookie recipes. Whisking the dry ingredients together, especially flour and baking powder or soda, makes sure the leavening is spread evenly so you don't get one cookie that rises like a balloon and another that stays flat. Also, creaming the butter and sugar first until it's light and fluffy traps air bubbles that give cookies a softer texture, not just mixing wet and dry separately. Did you notice any difference in how evenly they browned after you switched to the two-bowl method?

@parker_campbell, I've been tossing everything in one bowl for years and my cookies turn out fine. Nobody's ever complained about a flat cookie or uneven browning at my house. Some of us don't have time to wash two bowls for something that's gone in twenty minutes.
