Showerthought: I always said boxed cake mix was cheating, then my kid's birthday happened
My daughter turned 7 on a Tuesday and I had a full day of work calls, so at 4pm I grabbed a $1.25 box of yellow cake mix from the corner store on 5th and just went with it. I've been baking from scratch for years and always turned my nose up at the stuff, but that cake came out level and soft and nobody at the party said a word except my mother in law who asked for the recipe. Meanwhile my scratch chocolate cake from the week before had a sunken middle you could have parked a hot wheels in. I still think scratch tastes better, but I'm not above a box on a weeknight anymore. Anyone got a box mix they actually rate higher than their own recipe?
