Shoutout to the lady at the Beaverton library sale who told me my cookies were flat because I was "measuring flour like it owes me money"
I was handing out chocolate chip cookies at the library book sale last Saturday and this older woman took one bite and asked how I measured the flour. I said I just scoop it right out of the bag with the measuring cup and she laughed and said a 1/4 cup of packed flour weighs almost double what it should. Went home, tried the spoon and level thing plus a kitchen scale showing 120 grams, and my next batch finally came out thick instead of looking like tortillas. I have been making the same flat cookies for 6 years thinking my oven was broken, turns out my oven is fine and I am just stubborn. How do you all measure flour without dragging out a scale every single time?
I did the scoop and pack thing for years too, my cookies could have been used as frisbees. Now I keep a cheap scale on the counter and just weigh everything, takes like two extra seconds once you get used to it.
