Rant: I swore by butter for pie crust for 12 years, then a 4H mom in Dayton set me straight
I always made my crust with all butter because that is what my grandma did and I figured shortcuts were for people who did not care. Then at the county fair back in August I tried a slice from a 13 year old 4H kid and the crust was flakier than anything I ever made. I asked his mom what the trick was and she said half butter, half lard, chilled in the freezer for 20 minutes before rolling. I argued with her for a solid 10 minutes about it before I went home and tried it myself. First batch came out so much better that my husband asked if I bought it at a store, which honestly stung a little. Now I keep a tub of lard in the fridge and I feel a bit silly about the years I wasted. Has anyone else made the switch, or am I the last one holding out on the all butter thing?
