My grandma insisted I use room temp butter for cookies and I thought she was just being old school
I tried it her way after my last batch spread into one giant sheet on the pan, and the difference was actually crazy. The cookies held their shape and were way softer in the middle. Does anyone have a good trick for softening butter fast when you forget to take it out?

Grating it on a box grater works in a pinch!

Oh man, I had to do that last week! My microplane broke right as I started. The box grater was a total arm workout, but it got the job done. The pieces were just a bit thicker than I wanted. Still melted fine in the sauce though. Next time I'm just buying a new microplane first.

My buddy Dave tried that with a block of parmesan last Tuesday and ended up grating his knuckle pretty bad. He said it still worked fine but now there's a little blood in his Alfredo.
