My friend called my bread 'a doorstop with good intentions'
I was so proud of my first sourdough loaf, but when I gave a slice to my friend, she took one bite and said, 'This tastes like a doorstop with good intentions.' It was dense, gummy, and honestly, she was right. I realized I was so scared of over-proofing that I wasn't letting it rise nearly enough. The next weekend, I let the dough sit for a full 8 hours in my kitchen, and it doubled in size like magic. The bake came out with an actual open crumb and a crispy crust! Has anyone else had a brutally honest comment that actually fixed a baking problem for you?
