My brownies were always dry until I saw a baker on YouTube use a toothpick differently

I'd pull them out clean, but she said a few moist crumbs means they're done. Anyone else have a simple trick that fixed a basic mistake?

So you're saying the jiggle test is more reliable than the toothpick? What if the top looks set but the middle still moves a bit?

Yeah, that jiggle test is a game changer. I used to go by the toothpick too and my brownies were like little bricks. @dylan_green58, if the top is set but the middle still has a tiny wiggle, that's exactly when I take them out now. They keep cooking from the pan's heat and end up perfect.

Totally get the toothpick advice, but a few crumbs can still mean overbaked. The real trick is pulling them when the center just barely jiggles. That gives you the perfect fudgy texture every time.
