I think most people overmix their cookie dough and it ruins the texture

I keep seeing posts where folks cream butter and sugar for 5 minutes or beat eggs in like crazy, but I just mix until combined and my cookies come out soft and chewy every time. Has anyone else stopped worrying about overmixing and gotten better results?

Ha, guilty as charged - I once beat dough so much my cookies came out like hockey pucks!
