Hot take: I quit sifting my flour after 8 years and my cakes got BETTER
I used to sift flour every single time, no exceptions, for like 8 years straight. My grandma did it, every baking blog says to do it, so I just did it. Then last month my sifter broke mid-batch on a Saturday morning and I was already late for my niece's birthday party, so I just dumped the flour in straight from the bag and stirred it with a fork for a few seconds. The cake came out lighter than any cake I've made in the past 3 years. I thought it was a fluke, so I tried it again the next weekend with banana bread and same deal. Now I'm sitting here wondering if I wasted 8 years rinsing a sifter for nothing. I think the fork stir does the same thing as sifting, it just breaks up the clumps, and honestly the clumps in a fresh bag of flour are barely there anyway. Has anyone else ditched the sifter and not noticed a difference, or am I about to get roasted by the serious bakers here?
Same thing happened to me, sifter broke and I just whisked it with a fork, cakes came out fine. Pretty sure sifting is one of those things we do just because our grandmas did it.
