Debate: Should you weigh your flour or just use measuring cups?
I was at a friend's house last weekend and they were baking cookies just scooping flour straight from the bag with a measuring cup. I told them they should be weighing it for consistent results. But then they showed me their cookies came out fine every time. Is weighing really that important or is it just extra work for home bakers? I'm curious what everyone here thinks - do you weigh or scoop?
My mom once tried to substitute Greek yogurt for sour cream in a coffee cake recipe because she "didn't want to go to the store." It came out so dense it could have been used as a doorstop, and the top sank like a deflated pool float. She still insists it was "rustic" but we all had to chew each bite for like five minutes before swallowing. So yeah, measuring cups are fine until someone gets creative with substitutions.
