Burnt the bottom of a sourdough loaf so bad it set off the smoke alarm at 6am
I was using a new Dutch oven and didn't realize the oven rack was one notch too low. Had to open all the windows in my apartment for 20 minutes while my upstairs neighbor banged on the ceiling. Anyone else had a baking fail that woke up the whole building?

Why would you bake bread at 6am and expect anything different?

I mean maybe it's just me but I feel like nobody's talking about how bread dough actually needs time to rest and develop flavor overnight in the fridge. Like if you start mixing at 6am and expect a perfect loaf by breakfast, you're basically rushing the whole fermentation process. The yeast hasn't had time to do its thing and create those complex flavors. You'd probably end up with something dense and kinda flat tasting, not the airy bakery style loaf you were hoping for. Idk I just think the timing matters more than people give it credit for when they're planning a "morning bake.
