Hit 47 eggs in one week from 8 hens and now I have a fridge problem

I keep 8 hens in a 10x12 coop here in Spokane and last week they laid 47 eggs, which blew my mind since I was getting maybe 30 back in March. Now I've got 3 dozen stacked in the fridge, 2 cartons on the counter, and my neighbor already said no thanks twice. What do you all do when your girls go into overdrive, do you sell them or just start baking like crazy?
