Serious question, why does everyone overthink resume formats?

I spent like 6 months tweaking my resume layout, trying fancy templates and infographics. Then a recruiter at a hiring event in Denver literally told me they use a bot that strips all that formatting anyway. She said plain text with bullet points gets read faster than any design. Am I the only one who fell for that resume design trap?
