I thought air fryer cheesecake was a total joke until yesterday
My sister in Portland sent me a recipe for a mini cheesecake you make in a ramekin. I figured it would be a soggy mess, but I had some cream cheese to use up. I mixed it with one egg, a quarter cup of sugar, and a splash of vanilla, then put the ramekin in the basket. I ran it at 300 degrees for about 15 minutes. It came out perfectly set with a tiny bit of jiggle, and after it chilled, the texture was honestly amazing, like a real baked cheesecake. I was so wrong to doubt it. Has anyone else tried a dessert in the air fryer that actually worked out?

Ever notice how we get stuck on being right instead of just learning? Spencer_ross, I've found the best fix is to just say "huh, I was wrong about that" out loud when it happens. It feels weird at first but it stops that defensive feeling. In my experience, clinging to a weird idea just makes you dig in deeper. So admitting it fast, even just to yourself, sort of resets your brain. Your mileage may vary, but it's helped me let go of some truly odd beliefs.

Read a study once that said our brains actually release stress chemicals when we're wrong. That defensive feeling isn't just in your head, it's your body trying to protect you from something that feels threatening. Saying "I was wrong" out loud is like overriding that panic button. It's wild how just a few words can flip the whole thing around.
