Burned my salmon twice, then tried parchment paper
Was at a friend's place in Austin last week, she made crispy salmon in 12 minutes with parchment. I kept getting dry fillets at 400 for 15. Anyone else switch to parchment for fish? Does it really help with sticking?
Oh man parchment is a total game changer for fish! The paper traps a little steam under the fillet so it cooks faster and stays moist, that's why your friend's came out crispy in 12 instead of dry at 15. Just watch out, it can get soggy if you crowd the pan or pile the fillets too close.
