Overheard someone say AI art generators are just fancy copy machines and it got me thinking

They were at the coffee shop near my office talking about how these tools just remix existing stuff without understanding anything. I guess they have a point about the copyright stuff but I've been playing with Stable Diffusion for 6 months now and the results I get from specific prompts feel more like actual creation than copying. Does anyone else feel like the conversation is getting stuck on the wrong part of this?

My buddy spent 3 hours last week trying to get ChatGPT to write a haiku about his cat and it still came out sounding like a fortune cookie.
